Sweet potatoe harvest

Salad grows very well here in the winter. So happy about the first soft leafs.
Sweet, juicy and crunchy Yacon. Yacon is used to make a healthy, sweet, low-glycemic sirup which is a good sugar substitute and prebiotic, but quite expensive. Here we found out how easy it actually is to grow it! And what a delicious raw food snack it makes. We recommend to peel it, otherwisely it can have a too strong earthy flavor.
